Can I use the 74HC4051 8-channel multiplexer for analog potentiometers? And can you also add a pull-up resistor?

As it was answered here, you can use it for any inputs. As for resistor - no, you can't, because you have a potentiometer  on input. You need to care about good stable "noise-free" reference power, no interference,  and shielded and grounded cable, especially if it's lengthy.

Another question about the Analog MUX; Is it correct that the Analog Mux only GND and the PIN SIG (Z) are connected and + 5V, S0 / 1/2/3 is not used?

Of course all signal lines for MUX should be used, all address lines, as described here (see "Extensions" - Inputs).
